SUBSTANCE: invention relates to the food industry. Method for production of coffee ice cream with rosemary extract and liqueur provides for the introduction of freeze-dried coffee in the production process in a resulting product and nanostructured rosemary extract in sodium alginate or nanostructured rosemary extract in carrageenan. When cooling the mixture to -21±2 °C liquor is added. At the same time for 1,000 g of product 1 g of nanostructured extract and 180 ml of liquor are added.
EFFECT: invention allows to obtain a product with specific organoleptic properties, enriched with biologically active substances of rosemary.
