SUBSTANCE: invention relates to the food industry. Method comprises introduction into product of 2.5 g per 1,000 g of finished product of nanostructured additive, including dry extract of guarana in sodium alginate, or a nanostructured additive containing dry guarana extract in guar gum, or a nanostructured additive containing guarana dry extract in kappa-carrageenan.
EFFECT: invention is aimed at production of enriched ice-cream of high quality containing nanostructured dry guarana extract.
