FIELD: food industry.
SUBSTANCE: method is proposed for production of ice-cream with nanostructured dry extract of Bergenia. During production, 3 g per 1000 g of the end product of a nanostructured additive is added to the obtained product, containing dry extract of Bergenia in sodium alginate or a nanostructured additive containing dry extract of Bergenia in guar gum, or a nanostructured additive containing dry extract of Bergenia in kappa-carrageenan.
EFFECT: invention is aimed at production of ice-cream with specific organoleptic properties enriched with biologically active substances of vegetal extract of Bergenia.
