SUBSTANCE: invention relates to confectionary industry. Pastry is proposed – a mini-roll, containing a body, made in the form of rolled-up product of biscuit dough with printed on the inside of the product composition for greasing, recipe composition of sponge dough contains high-grade wheat flour, granulated sugar, invert syrup, edible salt, edible soda, vegetable oil, egg component, cocoa powder and water, and the recipe composition contains a dairy component, vegetable fat and flavor, moreover, the ratio of the dough product of biscuit dough and composition for coating is selected in the following wt.%: the dough product of biscuit dough 60.0–62.0; composition for greasing 38.0–40.0, biscuit dough additionally contains molasses, skimmed milk powder, emulsifier, glycerin, potassium sorbate solution in a water:potassium sorbate ratio of 1:1, citric acid, “Nova Sol Cof” antioxidant, coconut oil is used as vegetable oil, melange is used as an egg component at the given ratio of initial components, composition for coating additionally contains an emulsifier, solution of potassium sorbate in a ratio of water:potassium sorbate 1:1, and as a dairy component a semi-finished condensed milk of boiled milk at a given ratio of initial components, at the same time, condensed boiled semi-finished milk contains milk condensed with sugar, sorbitol, sorbic acid solution in the ratio water:sorbic acid 1:1, “Boiled condensed milk” flavoring, “Nova Sol Cof” antioxidant for the given ratio of initial components. This mini-roll contains a coating of milk chocolate icing in the amount of 24–26 wt.% of the total amount of the product and/or decor of the confectionery glaze in the amount of 2–4 wt.% of the total amount of the product.

EFFECT: invention provides improved organoleptic properties in terms of taste, increased shelf life.
