SUBSTANCE: invention relates to the lactic acid bacterium Lactobacillus brevis, intended for use as a food preservative. Said lactic acid bacteria is deposited in the German Collection of Microorganisms and Cell Cultures under registration number DSM 22721. Said bacterium is heterofermentative and inhibits the growth of at least one fungal organism.
EFFECT: invention can be used for the preservation of food, animal feed, pharmaceutical and/or cosmetic compositions.
