FIELD: food industry.
SUBSTANCE: mixture for making sheet waffles contains composite flour in the form of a mixture of rye wallpaper flour and red lentil flour at a ratio of 52:48–51:49 in the amount of 87.6 kg / 100 kg of the mixture, egg powder, granulated sugar, salt, sodium bicarbonate. Components use with the following content kg/100 kg mixture: composite flour 87.6, including: wholemeal rye flour 45.0–45.6, red lentil flour 42.0–42.6; egg powder 6.5; granulated sugar 5.0; food table salt 0.45; sodium bicarbonate 0.45.
EFFECT: invention allows to increase the nutritional and biological value of the mixture for the preparation of sheet wafers and finished products, to balance the protein in amino acid composition, to expand the range of mixtures that can be used as food concentrates – semi-finished products of flour products of improved composition.
