SUBSTANCE: invention relates to the development of formulations and technologies of flour confectionery products of increased nutritional value, in particular muffin-type cupcakes. Proposed cupcake containing wheat flour, granulated sugar, refined vegetable oil, salt, baking powder, milk (drinking or dry), flavoring agents, drinking water and flax components, which is used as flax flour or dried crushed flax seeds, at the same time for making a cake, flax flour is pre-mixed with drinking water until a homogeneous mass, and the dried ground flax seeds are pre-suspended with refined vegetable oil, moreover, use the following ratio of the original prescription ingredients, wt.%: wheat flour 33.6–37.8; granulated sugar 7.8; vegetable oil, refined 3.7; salt 0.8; baking powder 1.2; milk (liquid or dry) 23.3; flavoring 0–5.0; flax component 2.0–4.0; drinking water 20.6–23.4. Flavors are selected from the range: dried grapes (raisins), walnuts, hazelnuts, cashew kernels, cinnamon, chocolate.
EFFECT: invention consists in increasing the nutritional and biological value of a cake, reducing the caloric content of the product, expanding the range of pastry products for healthy nutrition, cupcake has excellent organoleptic indices (taste, smell, crumb condition), has a reduced calorie content.
