FIELD: food industry.

SUBSTANCE: group of inventions refers to sour-milk mixtures for infants. Following is disclosed: food composition comprising protein in an amount of at least 10 % to 20 % by weight based on the dry weight of the food composition and 1.6–4.0 g per 100 kcal, lipids in the amount of 3–7 g per 100 kcal, digestible carbohydrates – 5–20 g per 100 kcal, non-digestible oligosaccharides – 0.5–20 % by weight, calculated on the dry weight of the food composition, the composition is fermented by lactic acid bacteria and contains 0.10–1.5 % by weight of a mixture of lactate and lactic acid, calculated on the dry weight of the food composition, the total amount of L-lactic acid and L-lactate is more than 50 % by weight based on the total amount of lactic acid and lactate, the composition also includes 0.3–4 units beta-galactosidase activity per gram dry weight of the food composition. Use thereof for feeding an infant is declared.

EFFECT: non-digestible oligosaccharides in the claimed composition provide improved health of the intestinal tract, reduced costs for protein breakdown, reduced amount of endogenously formed proteases in combination with increased protein digestion and reduced protein breakdown.
