FIELD: food industry.

SUBSTANCE: group of inventions refers to sour-milk mixtures for infants. Proposed are: a non-therapeutic method for increasing the efficiency of protein assimilation in a human from 0 up to 36 months of age comprising administering a food composition comprising: protein in the amount of 5–20 % by weight basing on the dry weight of the food composition and in the amount of 1.6–4.0 g per 100 kcal, non-digestible oligosaccharides in the amount of 0.5–20 % by weight basing on the dry weight of the food composition, at least 10 % by weight basing on the dry weight of the food composition, a protein comprising composition fermented with lactic acid bacteria, and 0.10–1.5 % by weight of a mixture of lactate and lactic acid basing on the dry weight of the food composition, and wherein the total amount of L-lactic acid and L-lactate is more than 50 % by weight basing on the total amount of dairy acid and lactate and a food composition comprising the aforementioned components.

EFFECT: in a human aged from 0 up to 36 months an improvement in the health of the intestinal tract is achieved, as well as reduction in the cost for protein degradation, a decrease in the number of endogenously formed proteases in combination with an increase in protein assimilation and a decrease in protein digestion as compared to the effect of the food composition, which does not contain the protein-containing composition degraded by lactic acid bacteria and non-digestible oligosaccharides including non-digestible oligosaccharides.
