SUBSTANCE: method for production of ice-cream with vitamin D envisages introduction of a nanostructured additive containing vitamin D in high- or low-esterified apple or citrus pectin in the process of production in the process of production at rate of 1 g of nanostructured additive per 1,000 g of ready ice-cream.
EFFECT: invention allows to produce a product with vitamin D and corresponding organoleptic properties.
