FIELD: food industry.
SUBSTANCE: group of inventions relates to food industry, in particular, to production of food concentrates in apparatus under low pressure with supply of microwave energy, and can be used for production of fruit-and-vegetable chips. Method for moisture-thermal treatment of fruit-and-vegetable chips and line for its implementation allows to produce cold air, which is used for cooling of ready product and microwave magnetrons, almost completely use heat of waste heat carriers in recirculation circuits, perform drying and additional product drying with atmospheric air at low pressure.
EFFECT: use of the group of inventions will make it possible to increase operational reliability of the line operation, as well as quality of the ready product.
