FIELD: food industry.
SUBSTANCE: invention relates to starch-blade industry. Disclosed is a method for production of sugar-containing syrup of rye flour, including preparation of rye by way of grinding to flour, mixing of rye flour with water to form a suspension, suspension aspiration, mixture heating, starch hydrolysis by adding α-amylase and glucoamylase to carbohydrate composition. Flour is obtained by grinding rye grains on a disintegrator to mean particle size of 160 mcm. Rye flour is mixed with water until suspension is formed in ratio 1:3. Hydrolysis of starch is carried out successively α-amylase with dose of 0.2 units, AC/g of starch, glucoamylase with dose of 0.7 units, GlC/g of raw, as well as the introduction of bacterial protease in dose of 0.5 units, PS/g of raw material, mushroom protease with dose 0.15 units, PS/g of raw material for 4 hours at temperature of 55–60 °C. Produced mass is separated by centrifugation, clarified and condensed to sugar-containing syrup.
EFFECT: invention improves biological value of syrup.
