FIELD: chemistry.
SUBSTANCE: invention relates to the starch-syrup industry. The method includes preparation of a suspension by mixing starch with a calculated quantity of desalinated water to a concentration of dry substances of 10-45%. After that, the suspension pH is brought to 3.5-5.5 by an addition of a 10-15% HCl solution. The suspension is heated with constant mixing in a thermostated reservoir to a temperature of 45-58°C. After that, the solution of glucoamilase purified or in a composition with bacterial alpha-amilase and/or pullulanase or isoamilase is introduced. The mixture of the suspension with the enzymes is subjected to incubation at a temperature of 45-58°C for 10-100 h until the required degree of native starch in the range 20-70% is achieved. After hydrolysis the reaction mixture is separated into porous starch and glucose syrup with GE 97-99% and a content of glucose 95-98%.
EFFECT: invention makes it possible to obtain porous starch and glucose syrup in one stage.
