SUBSTANCE: invention relates to the coffee industry. To produce coffee extract method is implemented as follows. Fried coffee beans and water are mixed to produce a mixture thereof. Mixture of roasted coffee beans and water is milled in the chamber in which excessive pressure is created. Ground mixture is separated to produce a liquid extract of coffee and coffee grounds.

EFFECT: invention allows to preserve flavoring substances of coffee, in particular, volatile flavoring components of coffee in coffee extract, thereby improving the ready product quality, providing improved sensory perception (taste, smell, appearance), reducing the tendency to foaming, providing a combined working procedure, which is much simpler and less labor-intensive, reduces the overall complexity of the entire method.
