FIELD: coffee industry.
SUBSTANCE: disclosed is a method of reducing the content of acrylamide in an aqueous coffee extract, involving bringing an acrylamide-containing aqueous extract of coffee into contact with spent coffee grounds at temperature of 70 to 120 °C for 30 minutes to 50 hours to form a coffee extract with a reduced content of acrylamide, in which the acrylamide-reduced coffee extract contains less than 400 ppb acrylamide, wherein the method reduces concentration of acrylamide by at least 30%. Also described is a method of producing an instant coffee product obtained using a coffee extract with low content of acrylamide.
EFFECT: group of inventions enables to obtain an improved soluble coffee product with reduced concentration of acrylamide.
