FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used as a biologically active additive for food, as well as for preparation of vitamin-mineral complexes or ready food products. Biologically active food additive represents a mixture of powders of grape and apple pomace. Powders are obtained by drying the residues to moisture content of 6–8 % in a drier with infrared radiation at temperature of 35–45 °C, grinding of residues to 0.3 mm and separation into fractions using universal classifier of inertial type. Produced powders are mixed at the following ratio, wt. %: powder of grape refuses – 55–75, powder of apple refuses – 25–45.
EFFECT: invention allows to produce a dietary supplement to food from secondary raw materials of juice production with increased content of biologically active substances, such as resveratrol, vitamins P and E, polyphenolic and pectin substances, as well as macro- and microelements.
