EFFECT: method for detection and quantification of gluten consumed by a person with an edible diet involves bringing a urine sample into contact with an antibody which specifically recognizes epitopes of gluten protein, wherein recognition of epitopes by antibodies is an indicator that a human has consumed gluten.
