FIELD: food industry.
SUBSTANCE: algae processing method involves milling raw materials, extraction in purified water while heating, extract separation, treatment of purified algae, homogenisation to produce a gel-like food product. Extraction in water with heating is carried out three times with addition of distilled or reverse-osmosis water with pH 4–6 equal by weight of algae, with heating to temperature t=45–50 °C, holding for 6–8 hours with natural temperature reduction, adding to the obtained mass baking soda in amount of 2.0–2.4 % sodium bicarbonate and 4.8–5.2 % glucose and mannitol, taken in ratio of 1:1 to weight of algae, stirring with heating to temperature t=50–60 °C and holding for at least 1 hour, homogenisation to obtain a gel-like food product, cooling and freezing the packed gel-like food product for storage.
EFFECT: invention allows to enhance the quality and storage life of the gel-like food product obtained using the given method.
