FIELD: food industry.
SUBSTANCE: method includes laminaria preparation, mincing and thermal treatment in alkaline medium till jellylike seaweed mass is obtained. After that water is added. Jellylike seaweed mass is simultaneously homogenised till paste-like consistence. Paste-like mass is formed, put through filtering screen. Formed seaweed fibers are matured for at least 30 minutes in 0.15-0.25% calcium salt solution with water duty 1:2.0-2.5. After that 20-30% edible acid is added in portions 30-50 ml each every 5-10 minutes till pH is 5.0-5.5 and matured at least 1.5 hours. Fibers thus stabilised are evaporated and dried.
EFFECT: can be used in production of seaweed products.
