FIELD: food industry.
SUBSTANCE: invention relates to production of extruded food product from bean raw material. Method provides for supply of bean raw material with moisture content of 10–20 % to extruder at rate of 1–5 kg/min, treatment in extruder at temperature of 130–200 °C and pressure of 10–20 atm, forcing through spinnerets with holes sized 5–10 mm and cutting extrusion product. Then enriched with taste-and-flavor additives by placing additives into the machine, filled with vegetable oil with flavor additives dissolved in it or in the form of suspension, and stirring in it for 1–2 minutes or by mixing extrusion product with dry ground additives by method of continuous deboning combined with vegetable oil irrigation.
EFFECT: invention allows to produce high-quality extruded bean food product with high content of proteins and amino acids of vegetal origin on the basis of bean raw material.
