FIELD: food industry.
SUBSTANCE: method of preparing a plant product in the form of a meat substitute is proposed, the said method involves cleaning, grinding, calibrating, refining and further extruding the prepared raw materials from legumes or grains on thermal machines at a pressure of 30–39.9 atm and a temperature of 96–100°C, a processing time of 20–29 s, after which pearl barley is added to the specified legumes to obtain a product with the following ratio of components, wt.%: 20–40 of pearl barley; legumes the rest, or adding pearl barley to the specified grains to obtain a product with the following ratio of components, wt.%: 20–40 of pearl barley; grains are the rest, while flour or grits from chickpeas, or soybeans, or lentils, or peas are used as legumes, and flour or grits from corn, or wheat, or oatmeal, or rice are used as grains.
EFFECT: the invention is aimed at improving the quality of the texture of the resulting meat substitute.
