FIELD: food industry.
SUBSTANCE: invention relates to the food industry. A method for the production of extruded snacks is proposed, according to which rice and corn groats are mixed, then the resulting mixture is moistened with water with the addition of salt. It is fed into a single-screw extruder, in which a plastic mass is formed, which is directed into a rotating output unit of the extruder, in which the mass simultaneously expands and twists, thereby forming a bundle with increasing density and crust on the surface of the product. At the outlet of the extruder outlet unit, the product is cut into pieces and the resulting semi-finished product is sent to a separator to remove crumbs. The resulting semi-finished product is deep-fried, after which excess oil is removed, a flavoring additive is applied, the finished product is cooled and packaged.
EFFECT: invention is aimed at improving organoleptic properties, reducing caloric content, and providing benefits for digestion.
