SUBSTANCE: invention represents a method for production of gellan gum includes introduction of sowing culture Sphingomonas elodea into nutrient medium containing glucose, tryptone, mineral salts, adding to composition of nutrient medium of cresacin in amount of 1–12 mg per liter of nutrient medium, maintaining culturing conditions at the first stage for 28–35 hours, transferring the culture to the other fermenter to a second stage with another component composition of the nutrient medium, including sugar, a protein soya isolate, mineral salts, maintaining the culturing conditions at the first step for 19–29 hours, fermenting Sphingomonas elodea in the fermentation broth; clarification of fermentation broth; deacylating the clarified fermentation broth with an alkaline agent; Gellan gum is precipitated from fermentation broth, cleaned and dried.
EFFECT: invention allows to reduce time of gum production and to increase final concentration of gum in culture liquid.
