FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Proposed ketchup contains a flavoring composition of tomato paste, an acidity regulator and an intensifier of tomato taste, which is a natural cola flavoring agent. Ketchup is characterized by the following composition, wt%: tomato paste from 12 to 32 (depending on concentration), white sugar 15 to 22, salt from 1.8 to 2.2, spices from 0.05 to 0.1, a tomato flavor intensifier which is a natural cola nut flavoring, from 0.5 to 1.5, acidity regulator from 0.85 to 2, water – balance. Acidity regulator is a mixture of acetic acid and lactic acid or a mixture of acetic acid, lactic acid and malic acid.
EFFECT: invention allows to produce ketchup with intensified tomato taste.
