SUBSTANCE: group of inventions relates to the food industry. Two versions of the flour mixture composition for production of bakery products intended for sportsmen alimentation are proposed. First version of the flour mixture composition contains wheat flour of grade 1, oat bran, chickpea flour, culinary salt, sugar sand, dry gluten, sesame, ascorbic acid and dihydroquercetin at the following ratio of components: 1st grade wheat flour 63.5–81.9; oat bran 4.5–13.0; chickpea flour – 4.5–10.4; culinary food salt – 1.3–1.4; granulated sugar 3.5–3.6; dry gluten 1.4–3.9; sesame 2.7–4.4; ascorbic acid 0.008±0.002; dihydroquercetin 0.022±0.002. Second version of the flour mixture composition contains 1st grade wheat flour, whole ground wheat flour, culinary salt, sugar sand, dry gluten, dry milk, flax seeds, ascorbic acid and dihydroquercetin at the following components ratio: 1st grade wheat flour – 25.0–62.8; whole ground wheat flour 26.9–58.5; culinary salt 1.3±0.2; sugar sand 3.4–3.6; dry gluten 1.8–3.4; dry milk – 0.9–4.2; flax seeds 2.7–4.2; ascorbic acid 0.008±0.002; dihydroquercetin 0.022±0.002.

EFFECT: group of inventions makes it possible to produce composition of flour mixtures, balanced in composition and intended for bakery products preparation for sportsmen of power and speed-power sports.
