FIELD: food industry.
SUBSTANCE: invention relates to the field of food industry, namely to the technology of producing an aqueous base containing dihydroquercetin intended for preparation of recovery (health) beverages with increased storage life of functional (useful) properties. Method of producing an aqueous solution of dihydroquercitin with stable functional properties involves water pre-treatment by reverse osmosis with removal of Fe2 and Fe3 ions from water, obtained water is saturated with gaseous CO2 with its subsequent exposure in an isolated system for 8–10 hours, reducing pressure under normal conditions and repeated maintenance of water in open system for 4–6 hours, achieving equilibrium state between dissolved CO2 and CO2 content in atmosphere with setting index of active acidity (pH) in range from 3 to 6. Then, ascorbic acid in amount of 25–70 mg per 1 l of water and dihydroquercitin is added to the obtained prepared water, which is introduced into the prepared water in the form of a premix in the form of a solution of dihydroquercetin in propylene glycol-1,2 with a weight fraction of dihydroquercetin approximately 30.0 % by weight in amount of 50 to 500 mg per 1 l of water.
EFFECT: invention enables to obtain a stabilized dihydroquercetin solution, which retains its properties for a long period of storage.
