FIELD: food industry.
SUBSTANCE: invention relates to preservation industry. After packaging the jars are sealed with self-exhaustible covers and subjected to heat treatment without creation of counter pressure in apparatuses of open type by stepwise heating by heating with hot water and solution of calcium chloride of different temperature and subsequent stepped cooling.
EFFECT: method allows to reduce sterilization duration, preserve biologically active substances of raw materials, provide the possibility of thermal sterilization of preserves in open-type apparatuses without creation of counter pressure, and save heat energy.
