FIELD: food industry.
SUBSTANCE: invention relates to food industry. Disclosed is a method of producing sugar-containing juice of sugar beet, comprising washing, peeling roots from peels and milling them to produce fine pulp. Beet-root juice is obtained by two-step pressing with intermediate addition of hot water 80–90 °C, in a half amount from the pulp volume, followed by addition of lime milk and orthophosphoric acid into the juice, clarification and filtration.
EFFECT: invention provides sugar-containing juice ready for use in production of beverages and bakery products.
