FIELD: food industry.
SUBSTANCE: method involves preparation of recipe components containing fish raw material. Fish raw material is represented by fish with a small amount of connective tissue. Fish fillet is milled; celery, broccoli cabbage, sweet pepper, orange mint, dill greens, amaranth flour, cornflakes soaked in milk for five minutes, ground paunch allspice, food grade preventive low-sodium salt are added. Carrots and bulb onions are sautéed in butter. All components taken in certain proportions are mixed and delivered for finer grinding and whipping. Produced mass is molded in the form of oval or round shape, subjected to heat treatment in a double boiler, cooled and delivered for storage.
EFFECT: method ensures preservation of useful properties of initial components.
