FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used for production of meat or meat products for preventive alimentation. Method for production of minced meat semi-products for functional alimentation includes chopping gutted chicken carcasses, mincing with holes in a grate with diameter of 2-3 mm, making mince into which oat bran pre-soaked in milk for 10 minutes, pepper, with subsequent mixing and finer grinding during 7-10 minutes to homogeneous mass, semi-finished products molding in the form of round shape with weight of 70-85 g, thermal treatment in a double boiler for 20-30 minutes, cooling. For preparation of mince one uses chicken fillet and additionally introduced pheasant meat, amaranth flour, parsley and dill greens, shredded parsnip root vegetable and bulb onions and carrots sauteed in butter, as well as preventive food salt with low content of sodium. Quantitative ratio of components in the semi-finished product is selected.
EFFECT: preservation of useful properties of initial components of chopped semi-finished meat products and production of a meat product with functional orientation.
