FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Disclosed is an antioxidant composition for production of fish preserves with prolonged shelf life, which is made of dihydroquercetin, ascorbic acid, lecithin and sunflower oil. Also disclosed is a method of producing said composition, which includes loading into the reactor with sunflower oil while stirring and heating, adding a powder of dihydroquercetin while stirring, and immediately after obtaining a dihydroquercitin suspension in oil loading liquid lecithin into the reactor. Method then includes dissolving components and adding ascorbic acid. All the mixture is stirred until complete dissolution of the components, followed by cooling.
EFFECT: invention provides a composition having a synergetic effect for production of fish preserves with prolonged storage life.
