FIELD: food industry.

SUBSTANCE: antioxidant premix contains lecithin, synthetic food antioxidants, dihydroquercitin and triglycerides of caprylic and capric acids at the following components content, wt %: lecithin - 38.0-90.0, dihydroquercitin - 1.0-10.0, triglycerides of caprylic and capric acids - 5.0-60.0, synthetic food antioxidants - 0.5-2.0. The antioxidant premix production method involves production of dihydroquercitin suspension in medium-chain triglycerides at a temperature of 60-70°C under intensive stirring conditions, subsequent addition of lecithin and dihydroquercitin dissolution in the produced mixture at a temperature up to 90-115°C and turbo-stirring till a semi-transparent mass production, subsequent temperature reduction to 50-60°C, the synthetic antioxidant or antioxidants mixture introduction, stirring till complete dissolution of the components and cooling.

EFFECT: food raw materials storage life increase.
