FIELD: food industry.
SUBSTANCE: invention relates to alcohol-free industry, in particular, to methods for production of alcohol-free carbonated beverages used for consumer purposes. One proposes a method for production of an alcohol-free beverage which envisages production of a semi-product with acidity 4.8–5.9 pH units, with dry substances weight ratio of 66–68 %, wherein semi-product base is represented by biologically valuable extracts of pomace of white grapes and Eastern brakenfern, mixed at rate of 10–15 rpm for 5–10 minutes at temperature of 18–22 °C, blending of the obtained semi-product with sugar syrup is carried out with continuous uniform mechanical stirring at rate of 10–15 rpm for 20–30 minutes at temperature of 20–26 °C.
EFFECT: invention ensures naturalness and quality of the produced alcohol-free beverage, increases organoleptic indices, excludes formation of sedimentary suspensions, simplifies the technology and expands the range of products.
