FIELD: measurement technology.
SUBSTANCE: method includes assemblage of M. galloprovincialis mussels, measurement of total weight of mussels Wwhole mussel, soft tissue weight Wsoft t and meat yield index determination by formula Wsoft t/Wwhole mussel*100 %. Meat output index is calculated 1-2 times month using 10 mussels. Mussels achieved optimum commercial quality and is ready for implementation if meat output index exceeds 20 %.
EFFECT: method provides determination of degree of readiness of mussels to commodity realization.
