SUBSTANCE: invention relates to the biotechnology. Method for producing heterogeneous papain in gel involves immobilisation of papain on a matrix of food chitosan with molecular weight less than 100 kDa or chitosan succinate in ratio of 20 ml of enzyme solution in concentration of 1 mg/ml per 1 g of carrier, as a buffer solution for immobilisation there used is 0.05 M glycine buffer with pH 10.0 or 0.05 M acetate buffer with pH 5.8; incubation is carried out for 2 hours at room temperature with periodic mixing, formed sediment is washed with 50 mM Tris-HCl buffer (pH 7.5) until absence in washing water protein.
EFFECT: invention allows to increase the rate of enzymatic reaction and to increase efficiency of using the preparation based on papain and chitosan, including during reaction on solid surfaces.
