SUBSTANCE: invention relates to food industry and may be used in individual and public catering in production of instant food products, including frozen semi-products. By-product semi-product is presented in the form of frozen cubes with weight of 7–15 g of mince containing poultry stomachs, heart and liver at ratio of 1:1:1, eggs, salt and pepper. Quantitative ratio of initial components of the semi-finished product is selected. Method involves grinding and freezing of the main raw material. Main raw materials in ratio 1:1:1 are milled, eggs, salt and pepper are added and mixed till homogeneous mass, the mass is poured into molds and frozen at temperature of (-16)…(-19) °C.

EFFECT: production of semi-finished product with increased food value.
