FIELD: meat industry, in particular, preparing of chopped semi-finished products from farce made from chicken by-product.
SUBSTANCE: farce comprises ground by-product mixed with bread, native animal protein, mélange, fresh bulb onion, water, salt, and pepper, said components being used in predetermined ratio; forming cutlets from farce and bread-crumbing; cooling and freezing. Muscular stomachs or hearts of broiler chickens or muscular stomachs and hearts of chickens used as by-products are utilized in the ratio of 1:1. Native protein is introduced in an amount of 2% by weight of raw material.
EFFECT: increased efficiency owing to useful utilization of bird's by-products, improved quality of ready products, increased digestibility of ready products, and reduced costs of semi-finished and ready products.
