SUBSTANCE: invention relates to the food industry, in particular to the production of boiled sausage products, and is intended for use in meat processing plants. Ham contains duck meat and broiler chicken meat as meat raw materials, additionally contains nitrite salt, edible phosphates and ice water, contains dried garlic, ground black pepper, ground allspice and ground paprika as spices, and as part of a protein-fat emulsion raw apple pomace puree is used as apple pomace. The protein-fat emulsion is made from 18 wt.% chicken thigh fillet with skin, 18 wt.% duck thigh fillet with skin, 3 wt.% chicken liver, 6 wt.% boiled chicken stomachs, 6 wt.% boiled chicken hearts, 7.5 wt.% whey protein concentrate, 33 wt.% raw apple pomace puree and 8.5 wt.% ice water. The quantitative ratio of the initial components of ham has been selected.

EFFECT: increased nutritional value of the product, improved structural and mechanical properties.
