SUBSTANCE: invention relates to the field of veterinary and sanitary examination and quality control and thermal state of animal and poultry meat. Method of making microslides for identification of cooled and defrosted meat of slaughter animals and poultry by microscopy of structural structure of muscular fibres is characterized by the fact that from the analysed sample of cooled or frozen meat 5 longitudinal sections with size of 1 cm in length and 2 mm in thickness are cut out, are laid on the lower glass of the compressor chamber with gaps of at least 1 cm, covers the sections with upper glass, removing it relative to the lower glass as much as possible, glass is pressed with force to each other, after which they are shifted in reverse direction, while maintaining compression to initial position, glass is fixed with screws, giving muscle sections a thin configuration, after which screws are unwound, removing crushed sections and placing them on bottom of porcelain cup, subjecting them to colouring, coloured sections are placed on a slide, sections are added with 1–2 drops of 50 % aqueous solution of glycerol and fixing muscular tissue with cover glass, slightly squeezing it, and then assessing the thermal state of meat by the presence of mechanical damages of muscle fibres.

EFFECT: method enables producing the native preparations of muscular tissue in the shortest period of time to assess the thermal state of the meat by the presence of mechanical damages of the muscular fibres.
