SUBSTANCE: invention relates to analytical chemistry, specifically for determination of acid number of rape lecithin, and can be used in fat-and-oil industry. Method for determining the acid value of rapeseed lecithin involves sampling rape lecithin, sequentially mixing the sample with carbon tetrachloride and aqueous sodium hydroxide solution with concentration of 0.9–1.1 mol/dm3 to obtain a mixture, placing the obtained mixture into a pulse NMR analyzer, measuring amplitude of signals of nuclear magnetic relaxation of protons formed soap (As) and calculating the value of acid number by equation, characterized by the fact that mixing rape lecithin with carbon tetrachloride is carried out at a weight ratio of rape lecithin – tetrachloride carbon, equal to (1:4)÷(1:4.5), and mixing aqueous solution of sodium hydroxide is carried out at a weight ratio of rape lecithin – aqueous solution of sodium hydroxide, equal to (1:1)÷(1:1.1), wherein to calculate the value of the acid number, the equation is used: A.n.=2.226+0.900·As.
