FIELD: analysis.
SUBSTANCE: invention is intended to determine the acid number of liquid lecithin. The substance of the invention lies in the fact that a lecithin sample is taken, a lecithin sample is sequentially mixed with carbon tetrachloride and an aqueous solution of sodium hydroxide with a concentration of 0.9-1.1 mol/dm3 to obtain a mixture, the resulting mixture is placed in a pulse NMR analyzer sensor, measurement amplitudes of signals of nuclear-magnetic relaxation of protons of the formed soap (Am) and calculation of the value of the acid number according to the equation, in this case, mixing a sample of lecithin with carbon tetrachloride is carried out at a ratio by weight of lecithin/carbon tetrachloride equal to (1:6)÷(1:6.5), and mixing an aqueous solution of sodium hydroxide is carried out for 30-40 seconds at a ratio by weight lecithin/aqueous solution of sodium hydroxide, equal to (1:1.2)÷(1:1.3), while calculating the value of the acid number using the equation: K.h.=3,6567+0,8233·Аm.
