FIELD: biotechnology.

SUBSTANCE: method of producing polyunsaturated fatty acids with high content of arachidonic acid in lipids of aerial mycelium of Mortierella alpina fungus and a version thereof. Method involves culturing Mortierella alpina VKPM F-1280 fungus at 20–22 °C for 21 days on a nutrient medium containing oat flakes, glycerin, zinc sulphate heptahydrate, brewer’s grains. Variant of the method involves cultivation of beet pulp in a nutrient medium containing instead of brewer’s grains.

EFFECT: inventions provide higher output of arachidonic acid in sum of polyunsaturated fatty acids obtained from aerial mycelium fungus biomass.
