SUBSTANCE: invention relates to food industry and public catering and may be used as a composition for dough preparation during confectionary products manufacture. Disclosed is a composition for production of flour confectionary goods, which includes prime grade wheat flour, brown cane sugar, first category chicken eggs and quail eggs, butter or margarine, a baking powder, natural vanilla, culinary food salt and natural food coloring agent, for production of which one takes fresh or frozen red berries or sea-buckthorn berries, or red cabbage, or carrots, or turmeric, or spinach, wherein the initial components are used at the following ratio, wt%: first-category dietary chicken eggs and queen eggs 11.4–13.4; cane brown sugar 11.3–12.5; butter or margarine 29.5–32.4; baking powder 0.1–0.2; natural vanilla 0.1–0.2; natural food coloring agent – 0.3–0.4; culinary food salt – 0.1–0.3; prime grade wheat flour – balance. Eggs are used as freshly lay with matte surface of the shell, chicken eggs are used with shells of white and / or brown color.

EFFECT: invention is aimed at labor productivity increase and provides wide consumer properties of the end product, low cost and improved taste properties, which have the least effect on occurrence and development of cardiovascular diseases and diabetes mellitus of the second type, stabilization of color of target confectionary goods, expansion of range and raw material base, use of underrated raw material, as well as expansion of composition range for specified purpose.
