SUBSTANCE: invention relates to food industry. What is offered is a meat soufflé which contains fresh table carrots, a mixture of spices – nitrite salt, cilantro, dill, parsley, dried pepper, basil, almonds, caraway; culinary food salt, food ingredient – Abioiodselen, quail products – fillet, melted fat, eggs, with the following ratio of components, wt.%: quail fillet 70.0-80.0; melted quail fat 10.0-20.0; quail egg 5.3; fresh table carrots 3.8; spice mixture 0.5; table salt 0.3; Abioiodiselen 0.1.
EFFECT: invention provides production of enriched meat soufflé with iodine and selenium, increase of its nutritive value, improvement of quality characteristics of the product, including organoleptic properties, as well as expansion of the range.
