FIELD: brewing industry.
SUBSTANCE: method of beer production involves addition of alkali metals and alpha-acids and beta-acids in wort before or during boiling in specified amounts, and after wort boiling stage of wort fermentation. Bitter acid isomerisation process takes place in the wort. Invention also describes use of a composition containing salts of alkali metals and alpha-acids and beta-acids of hop during beer boiling.
EFFECT: invention enables to obtain a higher proportion of dissolved acids in wort as compared to a common fraction, as well as high extraction efficiency.
