FIELD: chemistry.
SUBSTANCE: invention relates to method of isomerisation of hop alpha-acids into hop iso-alpha-acids. Method includes mixing raw material, which contains hop alpha-acids, with, at least, one carbon-containing chemical compound with one or more functional groups, containing nitrogen atom with unshared electron pair, with pKb value lower than 5. Concentration of alpha-acids in reaction mixture at the beginning of isomerisation reaction constitutes, at least, 1 wt %. Thus, at the beginning of isomerisation reaction molar ratio of alpha-acids to nitrogen content of carbon-containing chemical compound(s) with one or more functional groups, containing nitrogen atom with pKb value lower than 5, constitutes from 20:1 to 1:10.
EFFECT: claimed method makes it possible to improve process of isomerisation of hop alpha-acids, for instance, increase its rate or oytput.
