FIELD: food industry.
SUBSTANCE: group of inventions relates to the dairy industry, in particular to processes for production of dry milk products, protection of dried product from overheating and destruction of constituent organic components (fat, protein, carbohydrates), and to equipment for its implementation. Method involves condensed milk dispersion in the form of disperse drops in a hot heat carrier flow, absorption of moisture by the heat carrier evaporating from disperse drops and reduction of its temperature, mixing dried disperse particles with heat carrier, movement of said mixture via pipeline, settling of disperse particles in horizontal section of pipeline between cyclone and drying chamber with formation of deposits and long stay of the latter in flow of spent heat carrier. In the process of precipitation of disperse particles thermal deposits of dry milk and step-by-step cooled down to 60–65 °C secondary energy carriers are performed. Subsequent injection of the cooled flow into the horizontal section of the pipeline with deposits of dry milk. During injection of cooled flow of heat carrier, it is divided into three flows, two of which are supplied to horizontal section of pipeline with simultaneous cooling of both dry milk and internal surface of pipeline with simultaneous deflation of sticked particles of dry milk. Third flow is fed into lower part of horizontal section of pipeline and directed towards and perpendicular to main flow of spent cooled heat carrier. Plant for production of dry milk comprises pressure and exhaust fans, recirculation of cooling heat carrier, air heater, drying chamber connected via pipeline to horizontal section with main cyclone, pipelines, cyclone-discharger, fan of pneumatic circuit, heat exchanger consisting of three sections, pumps for supply of cooling water from condenser to heat exchanger. It is equipped with a device arranged in the form of two half-tubes installed on the horizontal section of the pipeline connecting the drying chamber and the main cyclone. Latter are interconnected so that edges of upper half-tube form with walls of lower half-tube clearance of 2–4 mm. Semitubes are connected to form longitudinal cavities in which there are perforated plates. Lower part of lower half-tube accommodates air distributors of spent cooled heat carrier interconnected by pipeline and connected to source of spent cooled heat carrier.
EFFECT: group of inventions ensures achievement of technical result consists in improvement of quality of produced dry milk products due to prevention of overheating, their thermal stabilization and preservation of native properties with simultaneous safety of spray drying process.
