FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to pasta manufacture, and may be used in production of pasta products for preventive purpose. Method for production of pasta products envisages mixing of flour, liquid base and vegetal food concentrating additive. Vegetable origin additive used is chicory powder in amount of 1–3 wt%, parsnip powder or pumpkin powder in amount of 3–6 wt% of flour weight. Liquid base is represented by water extract of garlic with hydromodule 1:50 and 1:100. Present invention allows to produce pasta products enriched with vitamins, mineral and ballast substances, antioxidants, expand the range of functional purpose products.
EFFECT: invention has increased nutritive value and assimilability.
