SUBSTANCE: method for controlling the process of preparing a food product having a cooking parameter which depends on the initial temperature of the food product to be prepared involves the following steps: setting the type of food product; determining initial temperature of food product; estimating reliability values of more than one temperature range according to initial temperature, wherein each of more than one temperature ranges corresponds to a predetermined cooking parameter, and more than one temperature range and the predetermined cooking parameters are determined in advance, and reliability indicators are associated with the probability that the actual temperature of the food product is in a given temperature range based on the determined initial temperature; determining the time for preparation of a food product using said reliability indicators, corresponding to the product being found in a certain state, and determined predetermined preparation parameters corresponding to said conditions; cooking process is controlled during a certain cooking time based on estimated reliability parameters and preset preparation parameters. Food product preparation process control device having a cooking parameter depending on the food product initial temperature to be prepared, wherein the device comprises: a determining unit for determining the initial temperature of the food product; evaluation unit for evaluating reliability values of more than one temperature range according to initial temperature, in which each of more than one temperature ranges corresponds to a predetermined cooking parameter, and in which more than one temperature ranges and preset preparation parameters are determined in advance, and reliability indicators are associated with the probability that the actual temperature of the food product is in a given temperature range based on the determined initial temperature; and cooking process control unit.
EFFECT: invention allows to control the process of food preparation during the optimal preparation time ensuring the food product state registration.
