FIELD: chemistry.
SUBSTANCE: invention relates to a method of producing D-psicose, which can be used in chemical industry. Method includes epimerisation of D-fructose into D-psicose to obtain a solution containing D-psicose, first cooling and ionic purification of solution containing D-psicose, first concentration and second cooling of the purified D-psicose-containing solution, chromatography of the D-psicose-containing solution, which is subjected to first concentration and second cooling, to obtain a mother solution containing a D-fructose and a separated solution containing D-psicose, and second concentration and third cooling of the D-psicose-containing separated solution to obtain D-psicose crystals, wherein the D-fructose-containing mother solution obtained by chromatography, repeatedly used in epimerisation of D-psicose, and where mother solution obtained from crystallisation of D-psicose is reused in first cooling and ion purification, first concentration and second cooling or chromatography, and wherein first cooling and third cooling is carried out by reducing solution temperature or ambient temperature to 25–45 °C, and second cooling is performed by reducing temperature of solution or ambient temperature to 45–65 °C.
EFFECT: novel efficient method of producing D-psicose.
